The hottest dining spot in booming Shanghai, the Cupola, isn't in a skyscraper but in the tower of the venerable Three on the Bund, built in 1916. The stone structure contains two small rooms, both with stupendous views of the Bund promenade and spire-filled Pudong district. The upper salon, with its single table for two, is a popular spot for proposals. The room beneath seats up to eight (Tom Cruise recently came here with his cohorts from Mission: Impossible III). A day before your meal, you choose which one of the three gourmet restaurants in the building will prepare your tasting menu. Dishes may include sea scallops with a caper-raisin emulsion, from fusion-inspired Jean Georges; pandan-leaf panna cotta with mango puree, from the equally adventurous Laris; or steamed fish with cockles from the Whampoa Club, a Chinese restaurant.
