A welcome trend at Caribbean resorts is the creation of menus with health-conscious yet tantalizing cuisine designed especially for spa goers, so once you've detoxified, you won't be undone by a large plate of fries. "Many guests don't want to eat heavy meals; they want to cleanse themselves instead," says Claudia Dunlop, executive chef at Parrot Cay, where the Como Shambhala spa serves dairy-free and sugar-free dishes. The new menu at Sandy Lane's Spa Café, in Barbados, highlights the nutritional benefits of a Mediterranean-style diet rich in seafood, fruit, vegetables and olive oil.
